Kale Chips Recipe

On my journey to becoming healthier, I have been trying out some new recipes. Today was Kale Chips. I used the recipe that I found at Averie Cooks.

Averie’s Raw Vegan Kale Chips Recipe for 1 Bunch of Kale
1 c cashews (soaked for a few hours)
1 Red Pepper
Juice of half a lemon (2 Tbsp)
1/3 c Nooch (Nutritional Yeast)
1 Tsp Salt (or to taste)

Wash the kale & remove tough stalks, de-seed the red pepper, drain off your soaked cashews. Put all the ingredients into a Food Processor and blend everything together. Apply the coating to the kale. Bake in a 300° F oven for 20 minutes, flip, then baking another 10 minutes or so. Watch the Kale Chips very closely because everyone’s oven temps and desired kale chip crispiness level differs, so plan on babysitting your oven for about 45 minutes in total.

I will tell you that the kale chips DO NOT taste like Lay's Potato Chips. However, the crunch of a kale chip is very similar to that of a thin potato chip. I was pleasantly surprise to find that I did not hate the kale chips. In fact, I like them a lot. I find I like them even better after they have set out for a couple of hours. I am not a huge fan of the nuts though. Also, I need to perfect the use of my oven better. Burt kale STINKS!

I plan on trying a different recipe next time. Just olive oil, salt, garlic powder, simply organic BBQ grinder, and Nutritional Yeast. No Food Processor needed for that one. Yum.

My First Batch

Learning To Be A Shepherd

Yesterday, a few friends from church went to a farm to learn how to be a shepherd. There were cute little baby lambs everywhere. Bear with me on the pictures, everything was just so pretty with the sun setting, a storm coming, and the adorable lambs.

Cool Gift

I don't know how I forgot to post this, but I have to share it now. For Christmas, my sister-in-law made a comic book for the whole family. Her and my niece came up with all the details, giving each one of us a super power. She then hand drew everything and colored it on the computer. This is the cover and the pages she did for Brett and I.

I Love Kittens

I have been wanting a cat for an incredibly long time but my husband said we could only get a cat if his dad's cat had kittens. I didn't have much of a choice anyways, because the pound, Craigslist, nor the newspapers had any available. Well, spring is here! And guess who had some babies. And on my birthday! So on March 30th, we welcomed 4 little darlings. The calico is a girl, the rest are boys. She is the runt and never seems to have a lot of energy, so we leave her with her momma. However, the three boys are full of life and so darn irresistible. I am pretty sure we are getting the dark orange tabby. Now I just have to wait for him to get older.

Three days old.

15 days old.

18 days old.

Juice Fast

I tried to do the juice fast last week and hated every second of it. So I had a ton of fresh vegetables that I was not going to use this week. Therefore, I had to blanch and freeze a lot of veggies. In the process, I stumbled across a nifty little design in the celery.

Tanning Today

Today, I tried the fake tan with black tea that I saw on Pinterest. You brew 10 tea bags, pour tea into a spray bottle, then spray it on.  First, I had to have my husband spray it so it would be even.  Second, it took close to 20 coats of the stuff before you could tell anything. Third, it took forever and I had to air dry between each coat. (This is a very cold process, by the way.) Fourth, I had to scrub my shower with bleach to get the tea off. Fifth, I looked great... for a second, until the first drop of water touched my skin and washed all my hard work away. Needless to say, I will not be wasting my time with this again.

Being Healthy

I am trying to eat more healthy.

 Breakfast

Dinner. Don't ask what I had for lunch.

Arkansas

In Arkansas two weeks ago.

1. Waking up very early for yard saling. 2. My mothers chicken pin. 3. Krispy Kreame. 4. Brett digging up worms to feed the chicken. 5. Cleaning eggs to sale.

Cyprus trees and the Louisiana Purchase State Park which happens to be in the middle of nowhere.

 The Ashley Alexander House.

The Hub Cap Burger is in Scott. It is the old general store and hangs out over the water.

My parents front yard and a back road on the way to Little Rock.

The road from Scott to Lands End. Brett did the editing.

Brownies

For Brett's birthday, I made a cute little cake topper, if I do say so myself.

As you can see, I made brownies instead of cake. We don't really like cake that much. We even had Krispy Kreme donuts, milk, and Starbucks coffee at our wedding. They were a huge hit.

Weekend

Friday: hubbies birthday, rehearsal dinner
Saturday: yard sale in the morning, shoot a wedding
Sunday: Church, Easter dinner
A very busy weekend.

Brett was the photographer and the videographer.

I ran a camera for the candid shots and did just a little video. We had a total of 6 cameras.

Happy Birthday My Love

24 years ago on April 6, 1988, I was suppose to have been born. I was just too darn impatient though, and came a week early. However, three states away, a very punctual little fella was born. Through the years he has grown into the man I now call my husband. You are the most selfless, kind hearted, interesting person I know. You are a wonderful husband and I cant imagine walking through this life without you. So...

Happy 24th Birthday Love!
